Whipped up this smoky tempeh salad today and it was ?. I topped it with @lillieeatsandtells Lightened Up Cilantro Lime Ranch, which is on repeat in this house. I make a fresh batch each week and we use it on pretty much everything. ⁣

The tempeh recipe is from Food52. Its great if you have time to marinate it, but STILL great even if you are about to eat your own arm off and have zero minutes to marinate. I also added 60g brown rice to the salad for some good complex carbs. ⁣. (P.S. don’t you love when you make your meal all pretty and then realize you used the chipped bowl? ??‍♀️)

1 package tempeh⁣
2 Tbsp Tamari or soy sauce⁣
1 Tbsp Apple cider vinegar⁣
1 Tbsp maple syrup or agave syrup⁣
1 tsp Smoky paprika⁣
1 tsp olive oil⁣

1️⃣ Slice the tempeh into thin strips. ⁣
2️⃣. Mix the rest of the ingredients in a dish, then add the tempeh, turning to coat both sides. ⁣
3️⃣ Heat a pan on medium high; add the tempeh in a single layer and cook until browned, then flip over. ⁣

If you want, pour the rest of the marinade into the pan. It will sizzle up and make a nice sticky coating on the tempeh, like bbq sauce. ⁣

I ate mine on a bed of baby spinach, cucumber, radish and brown rice, but any veggies would work!⁣
