Lentil Sloppy Joe’s

*even your non-plant based friends will eat them, because they are that good 😉

These are one of the easiest meals to make. Throw all these ingredients into a slow cooker and cook on high for 4-6 hrs.

3 cups veggie broth
1 1/2 cup dry lentils
1/2 cup uncooked quinoa
8 oz tomato sauce
1/2 cup ketchup
2 TBSP maple syrup
2 TBSP mustard
1 tsp chili powder
1 tsp garlic powder
1 tsp paprika
1 onion, finely chopped
1 carrot, finely chopped
1 celery stalk, finely chopped
S & P to taste

Optional add ins for more spice: hot sauce or cayenne pepper

Serve on buns, on top of a baked potato, or however you like your sloppy joe 😉
