When veganizing a dish for the first time from a cuisine foreign to my own I like to stay as close as possible to the original recipe with the ingredients available to me. I researched this #yakiudon for days before I decided I had everything I needed to replicate it. I wanted to avoid those muddy, overly-greasy flavors you get from some take-out spots.
