What’s not to like about Sindhi Sai bhaji♥️


1 cup chana dal soaked for about 30 minutes
1 cup spinach, chopped
1/2 cup dill leaves, chopped
1/4 cup sorrel leaves, chopped
1/2 tbsp turmeric powder
1 tbsp red chilli powder
1 tbsp cumin powder
4-5 green chillies, chopped
1 cup, onion chopped
1/2 tbsp cumin seeds
2 tbsp asafoetida
Salt per taste
1 tbsp oil
2 brinjal, chopped
1/2 cup bottle guard chopped
1 potato, chopped
2-3 garlic cloves, finely minced
1 inch ginger, chopped


1. Heat oil in a pan and add cumin seeds and them crackle.
2. Add asafoetida and onions, ginger, garlic and cook till the onions turn translucent.
3. Add brinjal, potatoes and bottle guard pieces and cook for 5 minutes.
4. Further add all the leaves- sorrel, spinach, dill leaves and give it a good mix till the leaves wilt.
5. Add green chillies, soaked chana dal.
6. Add all the spices- turmeric, chilli powder, cumin powder and salt.
7. Transfer the entire mixture to a pressure cooker and about 2-3 cups of water and cook for 15 minutes or till 5 whistles.
8. Once the pressure is released, mash the bhaji with a masher and serve it with rice.

Note: If you do not have sorrel leaves, add a tomato and some tamarind pulp.
