What’s in your BUDDHA BOWL?! ? ‘Buddha bowls’ are so customizable and are a great, quick, one bowl way to get your grains, veggies, and proteins!

Ingredients:
– 1 romaine heart, chopped
– 2 handfuls of chopped kale
– 1 avocado (seasoned with everything but the bagel)
– 1/2 a small red onion, chopped
– 1/2 cup of @bobsredmill tri-color quinoa, cooked according to package instructions
– 1 cup of shredded carrots
– 1 cup of broccoli crowns, chopped
– 1/2 cup of cucumbers, sliced
– 6 chopped artichoke hearts
– @franklinfarmsfoods baked falafel balls, cooked according to package instructions
– a handful of raw pepitas (pumpkin seeds)
– a dollop of my homemade hummus! (Recipe a few posts back)
– juice from one lemon (this mixed with the hummus weirdly makes a nice dressing)

Instructions:
– cook the quinoa and falafel balls according to package instructions
– chop veggies
– throw everything in a giant bowl and enjoy*

*this makes way more than one serving. I ended up dividing this up for lunches for Adam and I.
