CHILLED COOKED RICE (MICROWAVE RICE ALSO WORKS)
RED CABBAGE
RED ONION
RED BELL PEPPER
TOFU
FROZEN PEAS
SPRING ONION / SCALLIONS
PEANUT BUTTER
PEANUTS
CILANTRO / CORIANDER
SESAME OIL
GARLIC
RED CHILLI
SOY SAUCE
SRIRACHA
METHOD:
DICE ONION, PEPPER AND CABBAGE.
STIR FRY IN SESAME OIL ON HIGH HEAT.
ADD TOFU CUBES AND COOK FOR FURTHER 2 MINUTES.
ADD GARLIC, RED CHILLI AND GINGER.
AFTER 2 MINUTES ADD RICE & PEAS.
ADD SPLASH OF SOY SAUCE, A TABLESPOON OF PEANUT BUTTER AND SRIRACHA TO TASTE.
GARNISH WITH CHOPPED PEANUTS, SPRING ONION AND FRESH CILANTRO / CORIANDER.
POSSIBLE SUBSTITUTIONS: ADD ANY OF YOUR FAVOURITE VEGETABLES FROM THE BOTTOM OF THE FRIDGE.
SUBSTITUTE SESAME OIL FOR COCONUT OIL.
