WHAT’S IN THE BOTTOM OF YOUR FRIDGE?

GOATS CHEESE AND SPINACH PASTA

DIFFICULTY – EASY

INGREDIENTS:

PASTA

GOATS CHEESE

SPINACH

VEGETABLE STOCK 

FLOUR

BUTTER

MILK

NUTMEG

BAY LEAF

PARMESAN/PARMESAN ALTERNATIVE 

LEEKS

GARLIC

OLIVE OIL

METHOD: 

ADD A SPLASH OF OLIVE OIL TO A LARGE PAN, AND MELT IN BUTTER. ONCE MELTED FRY GARLIC AND LEEKS ON A LOW HEAT UNTIL SOFTENED.

ADD A TABLESPOON OF FLOUR, SIMILAR TO MAKING A ROUX.

GRADUALLY ADD MILK TO FORM A THICK CREAMY SAUCE.

ADD GRATED PARMESAN, NUTMEG AND A BAY LEAF AND LEAVE TO SIMMER ON A LOW HEAT.

BOIL PASTA.

RETAIN SOME PASTA WATER (AROUND 100 ML), BLEND THIS TOGETHER WITH A LARGE CHUNK OF GOATS CHEESE.

ADD THIS TO THE CREAMY SAUCE. 

ADD A HANDFUL OF SPINACH.

DRAIN THE PASTA AND MIX WELL WITH THE SAUCE.

TOP WITH PARMESAN OR PARMESAN ALTERNATIVE.
