What would you do? If you wanted to make a recipe and open up the pantry for ingredients and were out of one of the main ingredients? But you found something that looks similar? Would you make the recipe or Pass?
Well I wanted to make Mjadra or ‘Mujadarra’ and salad – A delicious lentil & rice pilaf made with warm aromatic spices & topped with crispy caramelised onions! 😋 The recipe called for whole Masoor or brown lentils but found Moth lentils – had never tried the Moth lentils with rice so I gave it a try and came up with delicious new Lentil pilaf! Another addition to my vegetarian favorites. I served it with cumin raita and it was a hit! What do you think?

1 & ½ (8oz glasses) of brown lentil/ or in my case Moth lentils
1 (8 oz glass) of Basmati rice – see notes*
2 medium onions, thinly sliced
¼ cup oil
1 stick or ½ tsp ground cinnamon
½ tsp lebanese 7 spices – see notes*
½ tsp ground cumin
1&½ tsp salt or to taste
½ tsp black pepper, freshly grounded
In a pot brown onions until carmalized and nicely browned.
At the same time wash lentils and place in another pan with cold water – bring to boil and let it simmer till just tender, not mushy – about 90% done! (It took about 10 minutes for me)
Drain and reserve lentil water for rice.
Onions should be caramlized nicely till now so take some out for garnish – I didn’t since my kids don’t like them on top 😔
To the remaining onions add spices, rice, lentils and reserved water (2 of the same glass used for measuring rice) –
Bring to boil and lower the heat to lowest and cover the pot with paper towel than lid and let it cook for 20 minutes. (GIVE DUM)
Garnish with reserved carmalized onions and serve with your favorite salad and raita!
NOTES: i only washed and used the rice – didn’t soak them (used Zebra Basmati rice)
If using medium grain rice – wash and soak for at least 15 minutes
If you don’t have lebanse 7spice don’t worry -omit and it is Pakistani Pulao
