What some leftovers and pantry essentials can end up as. Brown rice and broccoli salad

Ingredients and instructions for 2 servings:
2 portions of brown rice
1 courgette, cut to half moons
100g broccoli, (I used tenderstem) ends cut off
100g edamame beans
2 spring onions
Handful of roasted almonds
1 tbsp soy sauce
1 tbsp tahini
1 tbsp sesame oil
1 lime, juiced
1 avocado
2 tsp chili flakes
Salt & pepper

1. Heat fan oven to 200 degrees
2. Add the courgette, broccoli and almonds to a baking tray and mix with some olive oil, salt and pepper. Bake for 15 minutes
3. Cook the rice to packet instructions
4. Add the edamame beans to a bowl and top with boiled water, let sit for 5-10 minutes
5. Mix together soy sauce, than, sesame oil and lime to make the dressing
6. Mix everything together in a large bowl and top with dressing and chili flakes. Enjoy!
