What qualifies as soul food? For me it’s definitely dal khichadi.

Ingredients:
1/2 cup moong dal soaked in water for 30 minutes
1/2 cup rice soaked in water for 30 minutes
(You can soak the moong dal and rice together)
1/2 tbsp cumin seeds
1/2 inch ginger grated
1 long chili split vertically (deseeded if you like less spicy)
A pinch of asafoetida
1 cup chopped vegetables- I used carrots, green beans, corn and peas. Any vegetable could be added. You can also use leftover cooked vegetables!
1 tsp Goda masala (optional)
1/2 tsp turmeric powder
4 tbsp oil or as required
Salt as per taste.

Procedure:
1. In a pressure cooker, add oil, cumin seeds, ginger, chili and asafoetida. Let it sputter.
2. Add vegetables and sauté well. Do this on low flame or the vegetables could burn.
3. Add turmeric powder, Goda masala, salt.
4. Pour in 2 cups of water and bring to boil. Taste the boiled water and adjust according to your likes.
5. Add the soaked dal and rice into the boiling water, stir well and pressure cook for 2 whistles.
6. Mix and garnish with coriander and some ghee on top (optional). Serve hot.
