What is your favourite #breakfast? Some people like pancakes, some prefer a fry up, but for me – it’s #overnightoats all year round! I used fresh blackberries for these blackberry coconut #breakfastpots, but they can be made with frozen berries and will taste just as delicious ? Oats are incredibly nutritious and along with blackberries this breakfast is bursting with antioxidants and important nutrients including potassium, magnesium and calcium, as well as vitamins A, C, E and most of B vitamins. This #healthybreakfast tastes so delicious and looks so appealing it really makes my mornings very special ?✨???

100g oats
400ml coconut milk from carton
100g blackberries
1 tsp vanilla
1 tsp cinnamon (optional)

For the chia jam
200g blackberries
1 tsp xylitol or erythritol (or rice/maple syrup)
2 tsp chia seeds

About 100-150g coconut yoghurt @kokodairyfree

I have actually cooked the oats with blackberries on the hob to save time, but you can mash the berries with fork, combine all the ingredients and place in the fridge overnight. To make chia jam place blackberries and your sweetener of choice in a sauce pan, cover with the lid and simmer for about 5-10 minutes until berries are cooked. Take off heat and add chia seeds. Set aside to cool. To assemble the breakfast pots layer oats, yoghurt and chia jam in a jar or a bowl. Serve with nut butter, coconut flakes and fresh berries ??
