What better way to stay motivated on those struggle days, than with a session of baking 🥰.

This is NOT one if those ‘healthy’ snack options.

Vegan Blackberry Jam Coconut Slice.

Ingredients – Base –
3 cups Self Raising Flour
1 cup melted Nutlex
1 1/3 cup White or Castor Sugar
1 tspn Salt
2 ‘eggs’/Egg Replacer

Extra –
1/3 cup Blackberry or favourite Jam of choice

Coconut Crumble Topping –
2 ‘eggs’/Egg Replacer
1 cup Coconut
1 cup Sugar

Preparation –

Preheat fan-forced oven 175C

Into a bowl pour – flour, salt, sugar, melted ‘butter & ‘eggs’.
Mix into a dough.

Grease and line a shallow baking tray.

Spread dough evenly in tray.
Layer dough with Jam of choice.

Mix bonus ‘eggs’, Coconut & Sugar in a small bowl. Ensure a crumbly consistency. Adjust accordingly.

Sprinkle Coconut crumble over Jam layer. Put in oven.

Bake on 175C for 20-30 minutes or until golden brown.

Remove from oven and place on cooling rack. Do not cut until completely cooled. Cut into slim fingers or squares. Best placed in an air tight container and chilled in the refrigerator when cooked.
