Banana Baked Oatmeal

The first time I had the banana baked oatmeal on day 3 of week 4 in the Fiber Fueled Meal Plan, I was amazed at the aroma that came from the oven while it was baking and the taste from each bite that I took when it was done.
Today I was equally mesmerized by how all of the simple ingredients came together to create such perfect harmony in my mouth. I was left feeling incredibly energized and ready to conquer the day!
Cinnamon, vanilla and banana gave this oatmeal it’s incredible flavour and the chopped walnuts gave it an additional crunch. I think these flavours would make for an amazing plantbased bread pudding during the holidays.
