✈️ We may not be able to fly off to the Greek Islands but that doesn’t mean we can’t eat like were not there! Try this delicious and easy to make Greek Orzo Salad ?
I pound orzo, cooked and cooled
6 oz pitted and sliced kalamata olives
2 cups arugula
12 oz sliced fire roasted red peppers
2 cups cucumbers, quartered
1 cup red onions, diced
6 oz crumbled feta
1/2 cup parsley, chopped
1/2 cup fresh lemon juice
1 cup olive oil
1 1/2 tbsp salt
1 tbsp dried oregano
In a large bowl mix together orzo, arugula, olives, red pepper, cucumbers, onions, feta and parsley until combined. Whisk lemon juice, olive oil, salt and oregano in a small bowl until throughly incorporated. Toss into the orzo mixture and combine until completely coated.
