We got to thank @vegamelon for this creamy red chickpeas curry 🍛

Ingredients :
• 1 Large onion – diced
• 2 tbsp fresh ginger – minced
• 3 garlic cloves – minced
• 2 green chilies – minced
• 1/2 tsp ground coriander
• 1/2 tsp ground black pepper
• 1 tsp ground turmeric
• 4 tablespoon red curry paste
• 2 large carrots – chopped
• One 14oz can chickpeas, drained OR one 1/2 cup cooked
• 4 cups of chopped vegetable or canned veggies of choice
• One 14oz can of coconut milk (light OR full fat)
• Salt, Lemon juice & spices of choice.

Method :
1) In a large pan, heat some oil & sauté the onion, garlic & Chili’s for 5mins.
2) Stir in turmeric, coriander, black pepper, curry paste & carrots.
3) Cook on medium-high heat until fragrant for about 5mins.
4) Add chickpeas & veggies with coconut milk
5) Cover the pot & bring to a simmer. Then reduce the heat and cook for 10mins or until the veggies are tender.
7) Season with salt, lemon juice & desired spices.
