弘上ALNUT & PISTACHIO NUT BRITTLE 五五五 I had to post this one too.. It just looked pretty to me..

Just listing the ingredients I used
1 cup sugar
1 cup nuts
2 to 3 tbsp water
1 tsp butter/ coconut oil if vegan
1/2 tsp baking soda.
1/4 tsp salt
Cardamom powder 2 to 3 pinches

That baking soda really makes it brittle! You don’t have to literally risk your teeth! 不不 I was pleasantly surprised by it. One thing is for sure.. you want them to be as thin as possible.. Timing is very thing.. so is safety! Please make sure your never distracted while working with candy! Dangerous business.

I don’t know how professionals do it or the exact method..but I take the caramel off the flame before it reaches the desired color.. because it really does keep cooking even after you remove it from the stove.. and will darken or burn quite fast..
