๐Ÿ’ข Vodka Cream Pasta ๐Ÿ’ข

Currently in a love affair with pasta especially tubed pasta and most importantly, the alcohol-infused kind of sauce. This is the easiest thing to make and only requires a few basic pantry staples yet can 100% impress anyone bc it sounds, looks, and tastes fancy lol. I can honestly eat 5 servings of this ๐Ÿ˜…

INGREDIENTS
70g tubed pasta, like penne or rigatoni
2 tbsp tomato paste
30g or half a medium sized onion red or white, minced
2 cloves of garlic, minced
fresh basil leaves for garnish, finely chopped
1/2 cup coconut milk
1/4 cup vodka
1/2 tsp red pepper flakes, adjust according to spice preference
1/4 tsp freshly ground black pepper
1/2 tsp salt or to taste
1 tsp olive oil (optional, can be oil-free)

DIRECTIONS
Cook pasta according to package instructions. Add olive oil to a skillet and saute onion followed by the garlic, red pepper flakes, and freshly ground black pepper. Add the tomato paste and stir for a few seconds until paste has coated the onion and garlic. Add the vodka to the skillet and stir to incorporate and wait until it has reduced. Stir in the coconut milk and let simmer for 5 minutes. Once the pasta has finished cooking, pour it over the sauce and toss to coat and salt to taste. Garnish with fresh basil and more of the red pepper flakes.
