VEGGIE THAI GREEN CURRY (vegan) 🌿

Revamp of one of my first ever recipes that I posted (if you scroll to the bottom of my feed you’ll see the pic, it’s shocking 😂), and also my favourite meal prep recipe ✨ If you’re vegan, make sure to double check the curry paste you’re using since many of them contain 🐟 sauce. I use the hot Thai green curry powder by Curry Masters (from @harrisfarmmarkets ) 🌶 As always, mix and match ur favourite stir fry veggies. I just used whatever was in my fridge at the time!

INGREDIENTS (serves 4)
• 500g firm or hard tofu
• 1 head of broccoli
• 1 small sweet potato
• 1 carrot
• 2 cups snow peas
• 3 cloves garlic
• 1 pack of green curry powder
• 2 cups of water
• 1 can of light coconut milk (I use @ayamaustralia )
• garnish: peanuts, red chilli, spring onion, lime wedges
• served with: mixed brown & white rice

Roughly chop veggies into bite sized pieces. In a large pan, heat olive oil, add in garlic & sweet potato. Cook on medium heat with the lid on until lightly browned. Add in broccoli & carrots, stir fry for about 5 min. Add in snow peas and diced firm tofu. In a large bowl, stir together curry powder and hot water. Pour into pan alongside coconut milk. Allow to simmer for about 10 mins or until curry has thickened and veggies are all cooked through. Serve with rice and garnishes!
