VEGGIE CURRY FRITTERS

This was one of those dinners when you have no clue what you are going to cook. I just made it up on the spot and it turned out great ?

In the fritters I used @flexiblefoodsau “taste of India”plant based mince. It had such a delicious flavour and not too spicy! Because I can’t handle spice ??
I served the fritters with broccoli and garlic fluffy rice (recipe below)

INGREDIENTS
Fritters:
100g Taste of India mince @flexiblefoodsau (already made)
1/2 cup frozen veggies
1/2 cup wholemeal flour
2 tbsp water

Garlic fluffy rice:
1 1/2 cup white rice
2 cups water + 2 cups extra water
2 tbsp garlic
Salt and pepper

METHOD:
1. Mix together mince, veggies, flour and water
2. Shape them into fritters and fry for about 3 minutes each side
3. Bring the rice and 2 cups water to a boil
4. Add in the garlic and salt + pepper
5. Once all the water is absorbed slowly add in 2 cups of water until if forms a fluffy consistency
6. Serve up and enjoy ?
