VEGETARIAN/VEGAN CHILI!!

Super easy, healthy, yummy, cozy meal for this colder weather.
You can also cook this in a crockpot rather than a big pot.
I’ll be using left overs on top of salad!

Ingredients: 1 chopped onion, 2 chopped jalapeños, 2 minced garlic cloves, 1 can diced tomatoes, 1 can tomato sauce, 2 cans beans (whatever kind you like), 2/3 cup quinoa (add less or more depending on how thick you want it), 3 cups water, cayenne, chili, red pepper flakes, salt.
Instructions: add all ingredients to pot. Add seasoning to your liking. Bring to a boil then let simmer. I let it sit for about 2 hours, stirring occasionally.
Serve with (all optional): avocado, chives, crushed chips, shredded cheese, sour cream
