Vegetarian Biryani ?

Simple, easy to make, and full of flavour ???

Ingredients

Onion x 1, finely chopped
Ginger and garlic paste x 1 Tbsp
1 large tomato, pureed in a blender
Tomato purée x 2 Tbsp
1-2 Tbsp biryani spices
1 pot of plain yogurt
Frozen mixed vegetables x 2-3 C
Potatoes x 750g, peeled, cubed and fried or you could use an air fryer if you’ve got one
Basmati rice x 2 C
Fresh coriander and mint leaves, chopped

Steps

? Wash then soak the rice for 30 minutes. Then add the rice to a large pot with 3 C of boiling water, 2 cardamom pods, bay leaf, and a sprinkle of turmeric. Cook till rice begins to float at the top then drain and leave aside

? Fry the onion with the ginger-garlic paste till it softens. Then add tomato and tomato purée and mix well. Then add defrosted mixed vegetables and stir altogether

? Mix the biryani spices with the yogurt then add to the pan and give it all a stir. Finally add the potatoes, coriander and mint leaves

? In a large pot alternate with layers of the rice and vegetable mixture

? Mix 1 cup of boiling water with 1/4 tsp of saffron then add to the pot. Cover and cook for 30 minutes
