Vegetable fried rice 🍛❤️

How often do you eat rice in a week?

Ingredients: (for 2 servings)
– 100g rice (cooked and chilled)
– tofu
– 200g mungo sprouts
– 130g tomatoes
– onion
– 2 garlic cloves
– 100g tomato purée
– 120g cucumber
– salt, pepper, soy sauce, sesame oil

Heat a sauté pan and sauté the onion and garlic until soft. Add tofu, mungo sprouts, tomatoes and sauté for 5-7 minutes. Then add the tomato purée and stir. For the end, add the chilled rice. Then stir to combine with the veggies, tofu and continue sautéing the rice for 3-5 minutes. Give the rice a taste, and season with salt, pepper,soy sauce or sesame oil if needed. Top it with the sliced cucumber.
