Vegetable Cutlets

Boil the potatoes.
Mash it in a bowl, add grated carrots, grated ginger, boil peas,chopped chilies.
Add cumin powder, turmeric powder, carom seeds, salt, raisins, lemon juice and chopped coriander leaves.
Mix all these ingredients together with the potatoes.
Add bread crumbs.
It helps to bind the ingredients nicely.
If needed, add more bread crumbs.
Now take a handful of mixture in the palm and turn them into the shape of Cutlets.
Take 2 tablespoons full of flour (maida)
Add a little water.
Make a fine paste.
First dip the vegetable cutlets in the flour and then coat it with bread crumbs.
Repeat the process.
Heat oil in a pan.
Fry them on a medium flame until golden brown.
Fry them evenly from all the sides.
Enjoy it with tomato sauce or green chutney.
