@veganchefjustin has your dinner plans sorted with his Vegan Eggplant Parmesan! ⁣

Ingredients:⁣
1 Eggplant sliced to 1/4 inch circles ⁣
1 C. All purpose flour⁣
2 C. Bread crumbs⁣
2 tsp. Garlic powder⁣
2 tsp. Onion powder ⁣
2 tsp. Dried Oregano ⁣
2 tsp. Dried Basil⁣
2 tsp. Sea salt⁣
1 tsp Pepper1 ⁣
3/4 C. Almond milk⁣
Salt for the eggplant⁣
Grapeseed oil for frying⁣
Fresh basil – Chiffonade (ribbons)⁣
Vegan parm for topping⁣

Recipe:⁣
1. Peel the eggplant, slice it into 1/4 inch circles then cover both sides with salt and let sit for 10 – 15 minutes. Be sure with wash the salt off after the eggplant sits. Preheat the oven to 425 while you do this.⁣

2. In a bowl, mix flour, milk and half of your seasonings and mix. In another bowl, mix bread crumbs and the rest of the seasonings and mix.⁣

3. Dip one eggplant slice in the flour mixture being sure to coat but to also shake off the excess. Then dip into the breadcrumbs and set aside. Do this to all of the slices.⁣

4. Heat pan to medium high and add enough oil to hit the sides. You are shallow frying not deep frying.⁣

5. When the pan comes to temperature, add some of the slices to the eggplant but be certain not to crowd the pan. After a couple minutes of frying, flip each slice. You should only have to flip the eggplant once so do not flip it until it has the desired brown color.⁣

6. After cooking on both sides, remove the eggplant to some paper towels to drain.⁣

7. Once all of the eggplant is cooked and drained, grab a baking dish and spread some sauce on the bottom to the sides. Layer the slices on the bottom in one layer. Cover that layer with more sauce and vegan cheese. Layer in this way until complete.⁣

8. Cover the eggplant and bake for 10 – 15 minuets or until the cheese is melted.⁣

9. Remove from the oven and let stand for 5 minutes then server on a a baguette, on pasta, next to a salad or whatever makes you happy. Top with parmesan and basil.
