Super easy and fun to make. When I was a kid, I looked forward to my mom taking me to go get a Big Mac after dance or gymnastics as a treat. I was so happy to recreate a vegan version of the BIg Mac and yes I will go to any length to make non vegan food vegan. I don’t hate the taste, I hate taking a life. For sure my favorite cheat meal!

Vegan Big Mac
1 cup onion, chopped
1 cup carrot, grated (large 2)
1 1/2 cups zucchini, grated (1 1/2 medium sized zucchini)
4 garlic cloves, sliced thin or minced
3 cups mushrooms, chopped
1/4 cup Bragg’s Liquid Aminos or soy sauce
1 cup oat flour (1 cup of oats in your food processor)
1 cup sunflower seeds (same, food processor)
Heat oil and add all veggies to the pot until soft, about 7-10 minutes. Add oats and sunflower seeds to blender/processor and make your flour. Drain water from veggies if you have any left over and toss it. Mix veggies and flour together with salt and soy sauce. Place in freezer for about 30 minutes. Make your patties and cook in the oven at 350 for 40 minutes and flip halfway through.
1/2 cup cashews, soaked (you can boil water and soak them for 15 minutes if you do not have cashews previously soaked)
1 tbsp apple cider vinegar
1/2 cup unsweetened almond milk
1 tbsp lemon juice
1 tbsp oregano
1/2 tsp paprika
salt/pepper to taste
Add all ingredients to food processor.
I mixed chopped romaine into the dressing. To put together, bun, lettuce mixed with dressing, burger, vegan cheese, another bun, lettuce, burger, avocado, bun. 🐷🐮🐶
