Vegan Walnut Cinnamon Cake 🐿 Result of a late evening baking session yesterday – it’s so delicious and has an amazing texture ❤️ You’ve got to try it! Find the recipe below 👇🏻 Happy weekend and lots of love, Sarah x

250g flour
150g ground walnuts
50g ground almonds
150g sugar (I’ve mixed white and light brown sugar)
2 tsp baking powder
1 tsp baking soda
Pinch of salt
1 tsp cinnamon
Pinch of cardamon
120ml oil (sunflower or coconut oil)
400ml plantbased milk mixed with 1 tsp apple cider vinegar
75g chocolate chips
Preheat the oven to 180C/350F, prepare a loaf tin and mix all ingredients except the chocolate chips in a big bowl. Whisk together but don’t overmix, fold in the chocolate chips, transfer to the baking tin and bake for 45-50min.

Once cooled down I glazed it with a simple icing made with 100g vegan cream cheese and 100g icing sugar – whisk together with a tiny bit of lemon juice. Enjoy!
