Vegan Veggie Fritters

Kanny loves spicy food. So this was made for my love and he totally enjoyed it. He has promised a lot of gifts for me lets see once everything opens.. I know my priorities well….Anyways lets get on to the recipe part…

Preparation Time:-
40 mins

Ingredients:-
3 russet potatoes
1/2 onion
1 grated zucchini
2 grated carrots
1/2 cup parsley
1/2 cup chickpea flour
1/2 tsp garam masala(optional)
2 tbsp ground flaxseed
1/2 cup unsweetened nut milk
1 tbsp cumin
1 tsp sea salt
1/2 tsp black pepper
2 tbsp avocado oil(frying)

Method:-
1. Boil the potatoes, mash them, keep it aside.
2. In a large bowl add the rest of the ingredients and mix them. Now add the mashed potatoes and mix everything together until well combined.
3. Heat the oil in a pan. Once hot, begin forming the fritters in your hands and fry them until well crispy and brown from the top.
4. Serve it with salsa dip with coconut yoghurt on top. Garnish as per your taste.
