✨Vegan “Tuna” wrap! A simple lunch idea that requires no cooking . Wrap it in a big collard green (as shown) or have it with your bread and toppings of choice. You could also turn it into a “tuna” melt, but it’s hot as heck here and I don’t want to even bother with the stove at the moment.

?Here’s what’s in it (approximately):
1 can organic great northern beans, drained and rinsed
2 stalks of celery finely chopped
1 carrot finely chopped
2 spoonfuls of relish
A few squirts of brown mustard
1/4 mashed avocado (or I sub @followyourheart vegenaise if I don’t have avocado)
Salt, pepper, cumin, and garlic powder to taste

Instructions: chip your veg, fork mash the beans to desired texture, add in remaining ingredients and give it a good stir! Adjust seasonings to taste or add more condiments for preference.
