[Vegan] TOMATO BUTTER GNOCHI By @terianncarty A delicious dish that’ll have you craving more⁠

2 cups Cherry tomatoes⁠
Canned white bean (I used navy)⁠
1/2 Onion cut into wedges⁠
2 cloves garlic⁠
2 tbsp cold Vegan butter⁠
If you don’t love gnocchi than use a pasta of your preference!!⁠
2 cups small broccoli florets⁠
1 tomato cut into chunks⁠
Handful cremini mushrooms⁠
Vegan parm⁠
Preheat oven to 400. Drizzle cherry tomatoes, 1/2 onion cut in chunks with olive oil and seasoning with salt and pepper. Roast for 25-30 minutes. Transfer to a blender and add 1/2 cup pasta water, 2 cloves garlic, canned beans, salt and pepper. Blend on high until smooth and creamy. Add two tbsp cold vegan butter and blend again until glossy. This makes a lot of sauce so you can divide into two containers.⁠
I used mushrooms and broccoli to round out my sauce but use whatever veggie you like. Finish with a good drizz of olive oil and lots of vegan cheese!⁠
