Vegan tofu spaghetti. So good and filling. This was my dinner last night. Here’s the recipe
1. Spaghetti soaked in water for half an hour (we are not going to boil it but cook with tofu. So it needs to be soaked)
2.Tofu cut into cubes
For the sweet and sour sauce, we need
1. One tbsp of Peanut butter
2. One tbsp of rice wine vinegar
4. Two tsps of brown sugar
5. One tbsp of chilli paste
6. One tbsp of sesame oil
7. Two tbsp of soya sauce
First add some oil to a frying pan and fry the tofu
Then add all sauce ingredients to a blender and blend until smooth.
Add the sauce and spaghetti to the pan and let them all cook.
For garnishing I used some cucumber, chopped cashews and sesame seeds. You could also use some chives or shallots.
