Vegan Tofu Curry!

Vegan tofu curry!
This was super easy to make and was enjoyed by the whole family.

Ingredients:
500g block of tofu,
1 can of coconut milk,
1 korma curry paste pot,
1/2 cup of cashews and
1/2 cup of water and rice to serve.

Method:
Tear up the tofu and fry in a pan with a little oil until golden brown and turning crispy (you may need to do it in batches), meanwhile soak the cashews in 1/2 cup of hot water. In another pan, add the coconut milk and curry paste and stir on a low heat. Once the cashews have soaked, blend with the water until creamy and light then stir into the curry sauce and simmer gently. Once all of your tofu have browned, too into the curry, stir and serve with fluffy rice!
