VEGAN SUPER SEED BANANA BREAKFAST COOKIES ? ?. Finally got around to writing up the recipe for you guys and now I’m currently making a second batch. Cookies in the morning is always a good idea.

1 cup @bobsredmill gluten free rolled oats
1/2 cup @bobsredmill almond flour
2 T ground flax seed meal
1/4 cup raw pumpkin seeds
1/4 cup chopped walnuts
3 tbsp chia seeds
1/4 cup coconut
1/3 cup @enjoylifefoods dark chocolate chips
2 tsp cinnamon
1/2 tsp sea salt
1/2 tsp baking soda
1 tsp vanilla extract
2 ripe bananas
1/3 cup @publicgoods maple syrup
1/3 cup @publicgoods almond butter (discount code: MARIANNAPGA)

INSTRUCTIONS:
Preheat oven to 350 F and line a large cookie sheet with parchment paper.
Add all dry ingredients to a large bowl, mix and set aside.
In a separate bowl mash the bananas then mix in maple syrup and almond butter until smooth.
Pour the wet mixture into dry mixture and slowly fold everything together until well combined. The dough will be more on the wet side.
Using a large ice cream scoop or spoon form 14 even sized balls and add them to the cookie sheet. Gently press the dough down to form a cookie shape (they will not spread out in the oven).
Bake for 22-25 minutes, until the edges are lightly golden brown. Remove from oven and let cool for 10 minutes before enjoying with a hefty dollop or almond butter and a drizzle of honey ?
