⁣Vegan Stuffed Acorn Squash ⠀

This is the perfect vegan acorn squash recipe, with a Middle Eastern twist! ? the sour taste of pomegranate molasses is perfectly combined with the sweet flavor of acorn squash and maple syrup. This dish is vegan and very nutritious! ?⠀

1 acorn squash – cut in half, seeds removed⠀
1 medium onion – diced⠀
1/2 cup lentil – cooked in water ⠀
1 cup quinoa ⠀
2 – 1/3 cups water⠀
1/2 cup crushed pecans (or walnuts)⠀
1/3 cup pomegranate molasses (or use cranberry juice concentrate) ⠀
1/2 cup pomegranate seeds⠀
1 tbsp maple syrup (or honey)⠀
2 tbsp olive oil⠀
1/4 tsp turmeric powder ⠀
Salt and pepper, to taste⠀

1. Brush the squash flesh with 1 tbsp olive oil and maple syrup. Sprinkle a little salt and pepper. Roast in the preheated oven at 400 Fahrenheit for 40 minutes. ⠀

2. For stuffing: In a skillet, sauté onion with 1 tbsp olive oil for 3-4 minutes. Add crushed pecans, turmeric powder and pomegranate molasses and cook for 2-3 minutes. Add cooked lentils, quinoa, pomegranate seeds and water. Bring it to boil, cover and reduce the heat to medium-low and let it cook for 20-25 minutes. ⠀

3. Keep it covered and remove it from heat. Leave it aside for 5 minutes. ⠀

4. Stuff the roasted squashes with the mixture. Garnish with pomegranate seeds, pecans and pomegranate molasses. ⠀

Tip: you can literally make stuffed acorn squash with anything.⠀
