Vegan scallion pancakes with a savory filling 🥞 For tonight’s dinner I tried these vegan savory pancakes with chickpea flour and scallions which I filled with a mushroom-spinach sauce, I’ll put the recipe down below for you guys 😊

To be honest with you, I have not been feeling my best mentally these last few days which is also the reason why I’m not as active on here as I wish I could be. I just think it’s important for us as a society that we talk about our mental health, too, and not just about our physical health.

Ingredients (for pancakes):
150g chickpea flour
2 tbsp linseeds
herbs, salt and pepper
300 ml cold water
2 scallions
some oil for frying

Ingredients (for filling):
200g Spinach
100g peas
100g mushrooms
100ml vegan cooking cream
herbs and spices
.
Instructions:
Cur the scallions into really small strips and mix all the ingredients for the pancakes in a bowl. Season with salt and pepper, as well as some (fresh) herbs like parsley. Let it sit for about 15min. Then fry them in a pan for about 2 min per side or until golden brown.
For the filling, put the veggies into a pot and fry them for some minutes. Then add the cooking cream and let it simmer for a few more minutes. Season it with herbs and spices and some lemon juice. I used some salt and pepper, chili flakes, cumin and thyme. Fill the pancakes and enjoy!
