hey guys! i apologize for not posting in a while, i’ve just been super busy and slightly overwhelmed by everything going on. i’m not vegan or vegetarian but i try to eat as plant-based as possible. when i was on vacation a family member made a vegetarian meat sauce and served it over a baked potato. i tried to replicate it from memory and mine was more of a pasta sauce so i served it over chickpea pasta. it was quite good and i’d recommend. enjoy and stay safe my loves💛💛

ingredients:
* 1 tbsp olive oil
* 2 celery stalks; chopped
* 1/2 cup chopped carrots
* 1 chopped medium onion
* 2 garlic cloves; minced
* 1/2 cup grape tomatoes; halved
* 6 basil leaves; chopped
* 1 tsp chili powder
* 1 tbsp Italian seasoning
* salt; to taste
* pepper; to taste
* 2 cups red wine
* 1 1/2 cups tomato sauce
* 1 bag gardein meatless ground

how to make:
step 1: in a medium pan heat oil, onion, and garlic over medium-high heat until aromatic, about 2-3 minutes. add carrots, celery, and chili powder and sauté for another 2-3 minutes. add red wine and cook for 5 minutes or until wine is reduced
step 2: add the sauce, tomatoes, basil, Italian seasoning, salt, and pepper and allow the mixture to simmer covered over low heat for 10 minutes
step 3: add the meatless ground “beef” and allow the sauce to simmer for 10 more minutes
step 4: serve over pasta or potatoes and enjoy😊
