Vegan Quinoa Pesto Salad With Tender Vine Leaves (or Blanched Kale as Replacement) Drenched in Date Butter.

Ingredients:

Salad ingredients
1 cup of cooked quinoa
2 tablespoons of @sacla_uk vegan pesto
A few broken walnuts
½ cup of steamed green peas
Handful of chopped cherry tomatoes
1 finely chopped shallot
5 cracked black peppercorns
1/2 tsp of smoked paprika
1/2 tsp zatar spice mix
Some crumbled tofu
Juice of 1 lime
1 tsp of maple syrup
Sea salt

Date drenched vine leaves:
10 tender vine leaves ( or use kale as replacement) blanched in hot water for 10 seconds and Mix 1 tablespoon of @d8_made date butter, juice of 1 lime and 2 teaspoons of balsamic vinegar, to coat the blanched vine leaves 🍁

Method:
Mix the salad ingredients in a large bowl. Arrange the date drenched vine leaves all around it. Enjoy!
