Vegan Pumpkin Spice Donuts ✨
Just in time for Halloween haha! Thought I better do something festive but also had pumpkin to use up at home so this was perfect ??
300g cooked pumpkin (mashed or blended to a purée)
2 cups flour
1/8tsp ground cloves
1/4tsp ground ginger
1.5 cups caster sugar
2tsp baking powder
1/3 cup vegetable oil
1tsp vanilla extract
1tbsp apple cider vinegar
1/4 cup melted margarine
Cinnamon sugar for coating:
1/2 cup sugar
Preheat oven to 180 degrees Celsius.
Sieve dry ingredients into a large mixing bowl. In a separate bowl mix pumpkin purée, oil, vanilla, apple cider vinegar and melted margarine together until well combined.
Pour wet mix into dry mix and stir until combined. Fill donut tin with mixture. Each donut about 2/3 full.
Bake in oven. Small donuts about 10 minutes until knife comes out clean. Bigger donuts (like in the picture) take about 15 minutes. Once donuts have cooled slightly take them out of the moulds and coats in cinnamon sugar then they are ready to eat!
Makes about 18 bigger sized donuts (so lots of little ones ?).
