Vegan Pumpkin Pie Filling Recipe ⬇️

Ingredients ——
🎃9 ounces firm tofu
🎃 2 tbsp water
🎃2/3 cup sugar
🎃2 tablespoons tapioca starch
🎃1 tsp cinnamon
🎃 1/4 tsp nutmeg
🎃 1/4 tsp cloves
🎃 1/4 tsp allspice
🎃 1/4 tsp ginger
🎃 1 tsp vanilla extract
🎃 pinch of salt
Instructions ——
1️⃣Follow instructions for vegan pie crust from @foodnetworkkitchen and add 2 tsp of cinnamon if you want. 😋
2️⃣Once the crust has cooled for 20 minutes, blend the crust ingredients together. (Try not to eat it all raw. 😅) Spread evenly in the pie crust and tap to get rid of bubbles. Bake for 45 minutes. Let cool completely.
3️⃣Optional: serve with whipped coconut cream — whip 1 can chilled coconut cream (cream only) with 3 tbsp sugar.
