Vegan Pumpkin Pie Filling Recipe ⬇️

Ingredients ——
?9 ounces firm tofu
? 2 tbsp water
?2/3 cup sugar
?2 tablespoons tapioca starch
?1 tsp cinnamon
? 1/4 tsp nutmeg
? 1/4 tsp cloves
? 1/4 tsp allspice
? 1/4 tsp ginger
? 1 tsp vanilla extract
? pinch of salt
Instructions ——
1️⃣Follow instructions for vegan pie crust from @foodnetworkkitchen and add 2 tsp of cinnamon if you want. ?
2️⃣Once the crust has cooled for 20 minutes, blend the crust ingredients together. (Try not to eat it all raw. ?) Spread evenly in the pie crust and tap to get rid of bubbles. Bake for 45 minutes. Let cool completely.
3️⃣Optional: serve with whipped coconut cream — whip 1 can chilled coconut cream (cream only) with 3 tbsp sugar.
