VEGAN PROTEIN BROWNIES ? These are more than a simple cake and work like healthy protein treats, but even though the consistency are dense and rich it doesn’t lose its spongy texture. As always, I’d try to make it very low in calories, using low-carb flours, avoiding white sugar, substituting melted chocolate bars and butter for defatted cocoa powder and extra virgin olive oil and changing the classical walnuts inside for pecan nuts just on top. Instead of eggs I used aquafaba from chickpeas and I added applesauce for an extra natural sweetness and soft texture. RECIPE: ⚡️1/2 cup of whole rice flour ⚡️1/2 cup of gluten-free oat flour ⚡️1/4 cup of @kuikmeal protein powder (vanilla flavor) ⚡️2 Tbsps of coconut flour (you can use any other starch like tapioca or maize) ⚡️1 cup of fat-reduced cocoa powder ⚡️1/2 cup of extra virgin olive oil ⚡️1/2 cup of coconut sugar ⚡️1/4 cup of erythritol ⚡️1 cup of aquafaba or flaxseed water ⚡️150g of applesauce (I used an apple purée pouch for babies) ⚡️vanilla extract (to taste) ⚡️2 tsps of baking powder ⚡️a pinch of Himalayan salt ??It is better to use individual silicon molds or miniature bread mold, I’m not sure if this recipe will work for a whole cake because of its density. These were conceived as kind of protein bars. Mix all the ingredients together and bake for 30-35 minutes at 180C/360F. Let them completely cool down before unmold ?? #veganbrownies
