Homemade vegan chipotle aioli recipe:
2-3 garlic cloves, minced
1/4 cup Aquafaba (the liquid from a can or jar of chickpeas)
1 tbsp lemon juice
1 tbsp Dijon mustard
1/4 tsp sea salt
4 tbsp avocado oil
1/4 tsp chipotle powder
1.Start by whisking the aquafaba for about 1-2 minutes until it becomes foamy.
2.Mix in the oil, whisk again and then add all other ingredients.
To build your burger, you’ll need:
Vegan pretzel buns, chipotle aioli (recipe above), butter lettuce, sliced zucchini and yellow squash (sautéed in olive oil with garlic and a pinch of sea salt), Hilary’s Super Cauliflower & Fiesta Black Bean patties, sliced Roma tomatoes, red onion and avocado and more chipotle aioli.
Sides: 1. Roasted bell peppers filled with diced and steamed sweet potatoes, spinach, onion and more bell peppers. 2. Chipotle corn, grilled with vegan butter, sea salt, smoked paprika and chipotle powder. 3. Grilled lemon asparagus.
