VEGAN POTATO ROSTI
This is a perfect side dish that can be done within 15 minutes. A simple recipe that can be changed to your own liking and taste. Serve it with some salad to make it a fulfilling meal! Here we go:

INGREDIENTS:
– 2 cups grated potatoes
– 1 shalot, diced
– 2 cloves garlic, finely chopped
– 2 tbsp cornstarch
– 2 tbsp flour
– 2 tbsp olive oil
– Salt & Pepper
– 1 tsp chili flakes
– 1 tsp paprika powder
– 1 paprika, diced
– fresh coriander

RECIPE:
1. Put the grated potatoes in a clean kitchencloth and drain out as much liquid as you can.
2. Mix all ingredients (except the olive oil and coriander) together in a mixing bowl
3. Heat up a non-stick pan with some olive oil on medium heat. Scoop out some of the mixture with a spoon en fry untill both sides are golden brown (about 15 minutes in total)
4. ENJOY!
