VEGAN PO’BOYS WITH CRISPY AND PORKY FRIED BRUSSEL SPROUTS 🐷
When @outstandingfoods asked me if I wanted to try out their pigless pork rinds, I knew immediately that brussel sprouts would be involved.Using ground “pork rinds” to coat the brussel sprouts, I tossed them in my trusty old air fryer and the little fried balls immediately reminded me of the fried shrimp and oysters you see on po’boys!
So of course, I picked up some french bread, lathered it in lemony hummus, dressed it in cabbage, and stuffed those babies in- and doused it in hout sauce, duh. This plant based po’boy delivers a dose of New Orleans, no seafood needed!
VEGAN PO’BOYS WITH CRISPY AND PORKY FRIED
– 1 3.5 oz package Pigless Pork Rinds (I used Hella Hot Flavor)
– 1 lb Brussel Sprotus, trimmed if necessary
– Aquafaba from 1 can of Chickpeas
– 1/2 cup Cornstarch, or as needed
– 4 French Rolls, or 2 Baguettes
– To Garnish: Lemon Hummus, Shredded Cabbage, Louisiana Style Hot Sauce, or your favorite
Pour package of pigless pork rinds in food processor and process until you have a course meal.
Fill one bowl with aquafaba, one bowl with cornstarch, and one bowl with ground pigless pork rinds.
Dip brussel sprouts in aquafaba, then coat in cornstarch. Next, dip back in the aquafaba, and then coat with the pigless pork rinds. Repeat with all brussel sprouts.
Set your air fryer to 400* F, fill basket with brussel sprouts and fry for 15 minutes.
To assemble, spread hummus (or vegan mayo) on both sides of the bread, add cabbage, and fill with fried brussel sprouts. Top with hot sauce if you like!
