I love Asian food and Vietnamese Pho is certainly one of them! Sometimes it is really hard to find good vegetarian pho, so I created my own version! All the components go well together once we build up the soup. Pho broth is the heart of this recipe and needs the most cooking time. Here is the recipe

❇️Ingredients:
Pho Broth – Onions, Fresh Ginger, Five whole spices (2 star anise, 4 cardamom, 5 cloves, one handful of coriander seeds, and 3 sticks of cinnamon), store bought organic veggie broth, soy sauce or tamari, and sweet rice vinegar, salt, and vinegar.

Grilled Veggies and tofu – Olive oil, Baby bok Choy and Shiitake Mushrooms, Firm Tofu, salt and pepper

Toppings- Thin flat rice noodles, cut Lemon wedges, sprouted Moong beans, Thai basil leaves, sliced Jalapeños or Serrano Peppers, chopped cilantro, sliced scallions!

Sauce – Vegetarian hoisin sauce, sriracha (optional)!

❇️Method:
Pho Broth – Heat up a deep pan, charr cut onions and ginger, until they get little black color! Add all the spices and roast them around! Now after you smell the aroma of spices! Add veggie broth, water, salt, rice vinegar, and soy sauce or tamari! Now boil everything until the onions are soft! Keep the broth covered for few hours, so all the flavors marinate well. Strain and heat the broth before serving.

Now grill bok Choy and sliced mushrooms. Season with salt and pepper. Also grill cut tofu until lightly golden brown. You can also fry the tofu if you desire.

Boil water and cook rice noodles!.
.
.
In a bowl add strained pho broth, add cooked rice noodles, grilled Bok Choy and shiitake mushrooms, tofu, cilantro, scallions, sprouts moong beans, fresh jalapeño or Serrano, Thai basil leaves, lemon wedges. Customize it with hoisin sauce and sriracha on the top!
