Vegan Pad Thai失

This dish is healthy, satisfying and bursting with flavor! Its very quick to make, once all of your ingredients are cut and prepped.

Recipe Below 漎儭

1 package of stir fry/ pad Thai noodles of choice
1 block of tofu (pressed and cut into desired shape)
1 cup julienned carrots
1/2 cup chopped green onions
1/4 chopped cilantro

Sauce :
6 tbsp soy sauce
3 tbsp rice vinegar
5 tbsp maple syrup
2 tbsp fresh lime juice
1 tsp chili sauce / hot sauce

Cook the tofu pieces in 1 tbsp of oil over med/high heat until crispy and brown on all sides. Lower heat to med. Add carrots, green onions and cilantro to the pan with the tofu and stir fry for about 2 mins(until carrots are softened). Add the cooked stir fry noodles, and pour in sauce. Mix everything together until combined. (Dont cook more than 1-2 mins otherwise noodles will get mushy) Top with chopped peanuts, some fresh cilantro and a little squirt of lime juice.
