Vegan Mofongo ? ?

Have you guys tried this dish?! Mofongo is savory a Puerto Rican dish made with fried plantains and a few seasonings, and normally paired with a stew. I had it in a cute rooftop restaurant in San Juan last year, and haven’t stopped thinking about it. It’s super easy to make so give a try! ?

Serves 4

Ingredients – Characters
Stew:
1/2 cup chopped carrots
1 cup chopped spinach
1 onion, chopped
7 garlic cloves, minced
5 Thai green chilies, chopped finely
2 tomatoes, chopped
2 cups cooked kidney beans
2/3 cup tomato sauce
2-3 tbsp chipotle sauce of choice, I used Bitchin’ Sauce
2 tsp extra virgin olive oil
Salt to taste

Plantain:
5 large green plantains, peeled and sliced
2-3 tbsp adobo seasoning, I made my own with equal parts (paprika, oregano, onion powder, ground roasted cumin, garlic powder, chili powder, black pepper, salt)
Softito (sautéed 1/2 onion, 5 garlic cloves, 3-4 sweet baby bell peppers, hot red chili flakes, 1/2 cup cilantro)
3 1/2 tbsp oil
Special equipment: ramekin or similar container

Method – Tale
1. Pour oil, for stew, to a medium size pot on low med heat. Add onions, sauté until translucent. Add green chilies, sauté for 2 mins, and then add garlic and sauté until fragrant (2-3 mins). Now, add carrots, cook until tender. Add kidney beans, spinach, salt, tomatoes, tomato sauce, and chipotle sauce. Bring to a boil and then let simmer and cook for 10 mins, until thickened
2. While stew is cooking, In a medium bowl, combine sliced plantains, adobo seasoning, and sofrito. Mix well. In a large skillet, add 1 3/4 tbsp oil, for plantains, on medium heat. Add half of the plantain mixture, and cook through on both sides, flipping after 2-3 mins. After cooked through, set aside in a medium bowl, and cook the other half with the remaining oil. Transfer the rest to the medium bowl, and mash until soft.
3. Divide mashed plantain mixture into 4 equal parts. Place each in a ramekin or a similar container, and transfer it onto the serving plates. Place hot stew on top, garnish with freshly chopped cilantro, if you’d like and enjoy ?
