Vegan miso pasta stir fry? this dish contains gluten free edamame and mung bean pasta, fresh broccoli, red pepper, mushrooms, and crispy air fryer tofu in a creamy miso sauce ? Ingredients: (single serving)
-1 serving of tofu, pressed & cubed
-1 cup chopped broccoli
-1/2 red pepper
-3/4 cup sliced baby Bella mushrooms
-2 oz edamame & mung bean pasta
-1 tbs miso paste & 3-4 tbs hot water
-1/2 tsp sriracha
-1/2 tbs soy sauce
-1/2 tbs maple syrup
-1 tbs garlic minced
-1/2 tbs dried onion flakes
-1 tsp sesame seeds for garnish

Method:
1. Press tofu for roughly 30 minutes, then prepare marinade using the sriracha, maple, and soy sauce/tamari. Marinade at least 30 min.
2. Chop broccoli & pepper
3. Boil noodles according to package, rinse with cold water, and set aside
4. Preheat air fryer to 400 for 10 minutes, then add in tofu, flip half way.
5. While tofu is baking, sauté veggies in a skillet/nonstick pan with oil of choice, add in garlic and onion.
6. Create your sauce by whisking the miso paste and hot water & set aside.
7. Once veggies are cooked, reduce heat to medium-low and add in pasta & miso sauce.
8. Add as much sriracha as you’d like, I do about 1/4 tbs.
9. Stir fry the mixture, plate it, and top with your tofu and sesame seeds!
