VEGAN MEATBALL PARM SOUP

Ingredients

For the soup:

1 yellow onion, diced
2 cloves garlic
2 tbs tomato paste
1 28 oz can crushed tomatoes with basil
3 ½ cups veggie broth
4 ½ cups shredded vegan mozzarella, left out to get to room temperature for maximum melting
1 cup oat milk
½ tsp dried parsley
¼ cup nutritional yeast
Cooking oil of your choice
Salt & pepper

For the meatballs:

1 14 oz pkg Vegan Hot Italian Sausage
1 16 oz pkg Beyond Meat Ground Beef
1 tsp dried Italian seasoning
1 tsp dried parsley
6 tbs vegan egg
¼ cup vegan parmesan cheese
½ cup Italian-seasoned breadcrumbs
2–3 cloves garlic, minced
½ cup yellow onion, chopped fine
3 tbs + more if needed of oil and spray oil
4 medium-sized sourdough boules with the top cut off and the inside scooped out

Toppings of choice, some delicious options are: fresh basil, crushed red pepper, nutritional yeast, dried oregano
