was going to post this on national Mac n cheese day but didn’t get the chance 😔 if u kno me irl u kno i LUV Mac n cheese, and as I move towards a more plant based lifestyle, the mac n cheese does too! 😗 it’s super creamy and super tasty ! #nareenseats⠀

dEATS:⠀
1½ – 2 cups pasta, shape of choice⠀
2 cups potatoes, peeled&chopped⠀
1 cup carrots, peeled&chopped⠀
⅓ cup olive oil⠀
½ cup unsweetened nondairy milk (used coconut)⠀
½ cup nutritional yeast (sub parmesan cheese if not vegan)⠀
1 tbsp lemon juice⠀
1-1½ tsp salt⠀
½ tsp ground black pepper⠀
½ tsp garlic pow⠀
½ tsp onion pow⠀
¼ tsp red pepper flakes (optional!)⠀

• cook pasta according to instructions. drain for use⠀
• place potatoes and carrots into a pot, fill with water, and bring to boil. boil for about 12-15 min, until they are soft. reserve about ¼ cup of this water ⠀
• in a food processor, combine potatoes, carrots, the reserve water, and the rest of the ingredients. process until smooth, like a sauce⠀
• mix the sauce with the cooked pasta. top off with some vegan shredded cheese and black pepper. ENJOY 🥳👏🏽
