VEGAN MAC AND CHEESE READY IN 15 MINUTES 🌱

Ingredients:
Butternut squash, about 300g
1 small onion
1 clove garlic
1 tbsp olive oil
0,3 l vegetable stock
nutritional yeast
salt, black pepper to taste

Instructions:
Cut pumpkin in half, remove seeds, remove peel and cut into smaller pieces. Peel onion and garlic and slice both.
Pour 1 tbsp of olive oil in a pot, add onion slices and sautee. Then, add garlic, and butternut squash pieces. Give it a good stir for about a minute and let it sautee. When it starts to stick to the bottom, pour in a stock, stir and let it cook with lid on top until the butternut squash becomes soft. Meanwhile add salt and pepper to taste.
Remove from heat and blend with a stick blender until smooth.
Pour into cooked pasta, add nutritional yeast and mix well. You can add vegan cheese for more cheesy taste.
