Vegan lentil soup aka “adasi” 😋

Ingredients: lentils (as much as desired), one onion finely diced, tomato paste, 2 tomatoes (optional), turmeric, fresh garlic, salt & pepper, golpar koobideh ( ground Angelica), lemon juice
.
Direction: Cook your lentils in water until lentils are soft.
In a frying pan, fry your onions with olive oil. Once golden brown, add fresh garlic and turmeric. Then add 3-4 tbsp tomato paste (depends on how much lentils and water you have). Stir for 3-4 minutes (Optional: you can cook your tomatoes separately, peel, cut in small pieces, and add to the tomato paste mix. If using tomatoes, use less tomato paste~ 1-2 tbsp instead).

Add your tomato paste mix to the lentils. Add more water if needed. Add salt & pepper to taste. Cover and cook on low for another 15-20 minutes. .
Enjoy with lemon juice and golpar (ground Angelica) 😋
